Sunday evening is set in the Pauline Terrace with a live viewing and a menu designed for the moment. Jerk chicken wings finished with scotch bonnet and charred pineapple glaze arrive alongside lechón asado sliders layered with mojo grilled pork, chicharrón, and pickled onion. Tamarind baby back ribs marinated in sazón and pimentón and glazed with guava and tamarind round out the table, joined by picadillo empanadas served with queso blanco dip and pickled carrot. Served throughout the evening in the Pauline Terrace.
