Pauline is a New American coastal restaurant located inside The Shelborne by Proper. Named for Pauline Baker, wife and muse of legendary cocktail writer Charles H. Baker Jr., whose journeys through Latin America and the Caribbean helped shape Miami’s early culinary identity. The restaurant honors that spirit with romance, curiosity, and a deep respect for the cultures that have always defined this coast.

The menu draws from those same influences. Latin citrus, Caribbean spice, Mediterranean patience all interpreted through the freshest local catch and the particular sensibility of a city that has always known how to eat well.
