Pauline

Pauline, located in the heart of The Shelborne, is one of Miami’s most exciting dining destinations. Pauline is a love letter to South Florida’s coastal bounty, defined by precise technique, bold flavors, and the vibrant rhythms of the Caribbean and Latin America.

The seafood-forward menu showcases the ocean’s freshest offerings: Jonah Crab Claws, Conch Ceviche, and Key West Pink Shrimp from the raw bar; Rock Shrimp Fideos and Caviar Tostada among small plates; and standout entrées like Lobster & Mussel Sancocho and Turbot Encendido for the table. Every dish is crafted without seed oils, reflecting a commitment to cleaner, more balanced dining.

Named for Pauline Baker, wife and muse of famed cocktail writer Charles H. Baker Jr., the restaurant embodies the couple’s spirit of romance, travel, and discovery. Their journeys through Latin America and Deco-era Miami inspire every detail, from design to flavor. Open for breakfast, lunch, and dinner.

Tucked away as a hidden gem, Little Torch intimate lounge invites guests into an exclusive world of refined cocktails and curated music.

Inspired by the vibrant spirit of Latin America, the lounge features a tableside cocktail cart showcasing rare and storied spirits, alongside clarified seasonal punches that elevate the art of mixology.

Pool Café, Pool Deck, & Cabanas

A quintessential Miami Beach experience, the pool deck is a tropical escape where guests can relax and enjoy all-day dining. Savor refreshing frozen cocktails, seasonal “paletas,” and Latin-inspired takes on poolside favorites like conch fritters, a grouper club sandwich, or the jerk smash burger.

For mornings that move slowly or evenings best spent in, The Shelborne offers an all-day in-room dining menu shaped by fresh ingredients and familiar comfort. Expect breakfast staples, lighter wellness options, raw-bar selections, sandwiches, entrées, desserts, and handcrafted drinks delivered straight to your door. To place an order, simply dial extension 1438. Menus are available in your room, or you may complete the door-hanger menu and place it on your door for our team to collect and prepare your order.
